What's the story behind the name for this deck? Finkel? I knew a guy who played MtG years ago named Jon Finkel. Any relation? Also how does this deck beat Armory?

Tough matchup but not unwinnable. Your goal is frequently to stick some sort of draw engine, protect it and outdraw the armory deck, answering anything they play and eventually finishing them off with channel the tempest. It doesn't normally go down that way, but that's your goal at least. I think it is a better matchup then feln vs armory at least.

Not my deck so I'm not entirely sure, but I think its just called that because the original creator of this deck uses the username finkel(but is not the mtg one).

In these tournaments, matches are a best 2 of 3 format, with players allowed to sideboard between. This isn't built into the client yet unfortunately
