I am trying to get into sealed league and cannot decide where to even start! Any help would be greatly appreciated!
My first pack opened rilgons disciple and some fire cards so my initial thought was rakano. Then It felt like every pack I opened had a rare of a different color and I feel very split.
I'm now leaning towards JTF mostly because of the 2/2 empower gain +1/+1 guys but I am struggling to come up with anything decent.

I think you are looking at TJS. Lifespeaker is insanely good in sealed, and you have a Knight of Sorrow as well. With the Amber Acolyte, Argenport Stranger, and Argenport banner, and Xenan banner, you should be OK to splash Shadow. Meanwhile, you have several good Time cards (illumination wisp and learned herbalist for example). Your main color is definitely Justice. Anyways, those are my thoughts for now.
I did not run the herbalist at first, but man that is a good one. I'm greedy and went with the double shadow cards and it seemed to work. Twice I couldn't cast them when I would have preferred to, but they each pretty much won a game for me.
One game I lost I probably could have won but I didn't read cards and got my "give a creature deadly" mixed up with "give +1+1 and killer" I could chumped a 1/1 into a big threat but I thought it was the killer card. Man I was surprised when I played it on my turn.
I also did pull off the dream turn 2 4/4 once.
I'm pretty shocked this deck worked so well, it feels so weak but I guess that's the beauty of sealed. A game plan is better than individua cards since the opponent also has a small collection to build from
