Hey, I've been told that 1 ofs in a deck makes it unstable and less valuable. What's your take on that assumption?

Like most things in TCGs, it is entirely contextual.

When it comes to on-curve threats, you want 4 of the best ones, and then smaller numbers if you want 6 or 9 threats at that cost. For reactive cards, it is actually better to run fewer than 4 of each conditional card, as generally drawing one each of Suffocate Annihilate Deathstrike Permafrost is better than drawing four of any one, for example.
